Story: I Sodi di S. Niccolò | Castellare di Castellina

Castellare di Castellina is pleased to present the 2022 vintage of its Chianti Classico, a wine that symbolizes Tuscan tradition and is made exclusively from indigenous grape varieties. Castellare's Chianti Classico is a blend of Sangiovese (95%) and Canaiolo (5%), preserving the authentic formula of Italy's most famous wine without the addition of international grape varieties such as Cabernet or Merlot. It tells the story of Tuscany in every glass and strives for the utmost elegance.

With each new vintage, a new bird appears on the label, symbolizing the commitment to sustainability, a cornerstone of the winery's production philosophy. The bottle is adorned with an image taken from a drawing by Victorian-era artist and ornithologist John Gould. The drawing depicts a saltimpalo, a diminutive bird of the passerine family known for its round shape and habit of perching on poles, branches and raised perches. The Common Chiffchaff is primarily a solitary bird, even during migration. When perched, it constantly moves its tail and concentrates on hunting prey. It does not normally undertake long flights, being a short-distance migratory bird.

The harvest 2022
The summer of 2022 was marked by drought in Chianti Classico, but fortunately this did not affect the development of the grapes. The rains in spring helped to create sufficient water reserves for the vines to draw on during the hot months. In addition, the late summer temperature variations allowed the Sangiovese grapes to develop well. In mid-August, rainfall provided milder temperatures and an adequate water supply for optimal ripening of the grapes. Persistent heat and low humidity minimized the risk of disease. Chianti Classico 2022 from Castellare is round, soft and tasty on the palate. Thanks to the harmony of its tannins combined with the delicate complexity of its aromas and a final touch of sweetness, it offers a feeling of perfect balance in the mouth.

Pairings
Castellare's Chianti Classico is a versatile wine that pairs well with structured and savory dishes, such as pasta with meat sauces, aged cheeses, braised meats, roasts and, above all, classic Florentine steak - an ideal combination that pays homage to Tuscany's finest culinary tradition. - Gerardo [TS11/23]
