The Ligurian Taggiasca is perhaps the best, but also the most unknown edible olive of Italy. In general it is used for the production of the famous Ligurian oliveöl. The olive is very small, almost inconspicuous, bluish-purple, but highly praised for its fine olive flavor. The pit of the Taggiasca is very large in relation to the olive, therefore it is offered pitted. The usual loss of flavor due to pit removal does not occur because the Taggiasca has a high percentage of olive oil. - Gerardo
