The Ligurian olive is primarily used to produce high-quality Ligurian olive oil, which is prized worldwide. However, it is also very popular as a table olive, as its delicate, balanced olive flavor makes it a real treat. The Taggiasca variety stands out in particular: it is usually sold pitted, as its pit is relatively large in relation to the flesh.
Despite being pitted, the characteristic flavor is almost completely preserved, thanks to the high oil content of the olive. The untreated processing also preserves its natural color and underlines its authenticity.
