Frantoio Galantino | Apulien
The Galantino family business dates back to 1926, when Vito Galantino had the foresight and determination to purchase a majestic 19th century mill building and convert it into an olive oil mill. Since then, two generations of the Galantino family have operated the mill, taking it to dizzying heights of quality. Today, the Galantino mill uses olives owned by the Fenice family and from 2,000 reliable growers. Careful hand-harvesting of olives at the best stage of ripeness, careful selection, washing and crushing in large stone mills, cold pressing and centrifugal separation give Galantino Extra Virgin Olive Oil its flavor and aroma.
The Galantino family acquired the 'La Fenice' estate, which includes 47 hectares of olive groves that, as far as the eye can see, form a green area with over 15,000 Ogliarola and Coratina olive trees. The olives are harvested from October 15 to December 31, when they reach the perfect degree of ripeness, using the traditional technique of hand harvesting, which involves shaking the branches of the olive trees so that the olives fall gently onto hammocks'. Proof of the quality of the olives is the careful annual pruning, drip irrigation and state-of-the-art detection techniques for pest control, reducing the use of pesticides to an absolute minimum.
