A single varietal Primitivo of strong color with exuberant aroma of ripe red and black berry fruits, with spicy notes. The late harvested grapes ripen and dry on the vine until they partially rosin. Palombara · Primitivo di Manduria IGT 2021

Primitivo Palombara is the result of a selective harvest, grape by grape, carried out entirely by hand, and is a great Apulian red wine, a perfect combination, with broad and powerful but soft and flattering tannins. Roundness and softness are the defining characteristics of this complex and elegant wine, a little star of the Apulian winemaking tradition that contains the true soul of Primitivo.

Intense and bright ruby red color. Elegant nose with fruity and floral notes of red fruits such as plums, ripe red cherries, blackberries, red currants and blueberries, with the unmistakable aroma of ripe Primitivo grapes with naturally sun-dried berries, characteristic of the variety.

Prima Mano · Primitivo IGT 2022

Prima Mano seduces the senses with aromas of crushed rose petals, raspberries, blueberries, black pepper and the scent of sunlight on a dewy meadow. Notes of dried apricots, maraschino cherries, lemon and eucalyptus unfold on the finish. This wine is produced without wood maturation, which allows its natural aromas and special fermentation technique to come into their own.

Mark Shannon has developed an innovative method: hot fermentation of the grape skins and cold fermentation of the juice. Fermentation begins first, then all the juice is drawn off and cooled. The remaining skins heat up, break open and release their color, tannins and valuable ingredients. At the perfect moment, the ice-cold must returns to the skins and fermentation continues cold. This process combines the intense extraction of a hot fermentation with the fruity freshness of a cold fermentation. - Gerardo [TS02/23]
