The foolish cellar master holds up a mirror to us with this sparkling wine and turns expectations upside down: A sparkling wine from South Tyrol produced according to the Pét Nat (Pétillant Naturel). A sparkling wine of wild naturalness, also known in Italy as Ancestrale. To our knowledge, this niche product is also the first natural wine from South Tyrol, dismissed years ago as a crank, but today it is impossible to imagine the sparkling wine scene without it. - Gerardo [TS12/22]

Pure variety Pinot Nero aged in ceramic eggs, produced in a unique small edition of 1,333 bottles.:
A Pinot Noir in search of authenticity, without the use of wood during fermentation and aging. Fermentation in ceramic eggs and maceration on the skins for about three months, then racking and aging in ceramic for another nine months. The grapes come from Oberplanitzing, from an eastern slope at 500 meters above sea level; clayey limestone gravel with porphyry and granite and thus high silicate content. - Gerardo [TS12/20]

Concentration please! Yield reduction and ripening of the grapes in the vineyard, plus drying for four weeks, then maceration in open tonneau for another month. It is not Amarone, it is also no Cabernet...it is Cabarone! This Cabernet Sauvignon, made according to the Amarone method, revives the ancient tradition of grape drying, still a novelty in South Tyrol. - Gerardo [TS12/20]

The Kaltern Winery has treated its French guest with its special demands appropriately, in the Côte-Rôtie style. On the nose, spicy notes of white and black pepper, underpinned by aromas of black currant and sour cherry.
