Our finest egg noodles come from Campofilone, the renowned pasta village in the Marche region, which has been known for generations for its exceptional pasta. The secret of this special pasta lies in the meticulous selection of high-quality ingredients and, above all, in the time factor: patience and a great deal of manual labor are required to produce pasta with a deep, distinctive flavor. Gabriele Marcozzi and his team knead the dough exclusively from fresh eggs and durum wheat semolina - without adding water - which gives the pasta its distinctive texture and intense flavor. This traditional approach clearly distinguishes artisan pasta from industrially produced goods.

Another crucial step is slow drying at a low temperature, which gives the pasta time to fully develop its natural texture and flavors. In contrast to rapid, machine drying, this allows the pasta to retain its velvety yet al dente consistency and complex flavor, which connoisseurs particularly appreciate.
