Olive oil is a vegetable oil obtained from the fruit of the olive tree and is one of the most sought-after and most widely used vegetable fats in the world. It is not only an integral part of Mediterranean cuisine, but also stands for lifestyle, health and centuries-old tradition. Extra virgin olive oil in particular, also known as “extra vergine”, is considered the highest quality variety and is prized for its purity and unadulterated taste. It is a purely natural product whose valuable properties are derived from a variety of natural ingredients - above all polyphenols.
These bioactive compounds not only give the oil a delicate fragrance, but also lend it its characteristic, slightly spicy taste. Depending on the olive variety used, the stage of ripeness at harvest and the degree of freshness, this piquant impression can vary and be noticeable through a subtle scratchy sensation in the throat. This sensory experience is a clear sign of quality. If it is completely absent, this often indicates a loss of freshness or inferior processing - often a sign of industrial refining or improper storage.
In Europe, the classification of olive oils is strictly regulated and is based on defined quality classes. The highest and most prestigious category is “extra virgin” (Italian: extra vergine), which is produced exclusively by mechanical means and at controlled temperatures in accordance with European Union regulations - the so-called first cold pressing. It must not have any taste or odor defects and the free acidity - an indicator of the freshness and quality of the oil - must not exceed 0.8%.
A genuine extra virgin olive oil is therefore much more than just a simple edible fat: it is the result of careful craftsmanship, decades of experience and a deep connection with the respective region of origin.
