The Ca' del Baio winery embodies a successful symbiosis of tradition and modern spirit. Giulio Grasso and his three daughters Paola, Valentina and Federica, who run the family estate with passion and innovation, are responsible for this. The roots of the winery go back to the time of great-grandfather Luigi Grasso, and today Ca' del Baio stands for four generations of winemaking tradition. With an area of 25 hectares, spread over the most prestigious vineyards in Treiso and Barbaresco, the estate produces wines of strong character that reflect the terroir and the passion of their producers.
First-class sites for Barbaresco and more
The estate's vineyards cover 17 hectares in Treiso and 8 hectares in Barbaresco, including such famous cru sites as Valgrande, Marcarini, Asili and Pora. These regions are known for their high-quality limestone soils, which give the wines their freshness and elegance. With an annual production of around 100,000 bottles, the winery remains manageable and can concentrate on the highest quality. The focus is on Nebbiolo, which is used for the Barbaresco and Langhe wines, but Dolcetto, Barbera and white varieties such as Chardonnay and Moscato di Asti are also part of the repertoire. Each wine tells a story about the terroir and the dedication of the Grasso family.
Sustainability and tradition in harmony
Ca' del Baio pursues a sustainable cultivation philosophy, which is summarized under the term “agricultura integrata”. This means that interference with nature is reduced to a minimum. Chemicals are only used in absolutely exceptional cases and work in the vineyard is carried out with the utmost respect for the environment. The renowned consultant Beppe Caviola has accompanied the winery for over twenty years and has constantly optimized the working methods both in the vineyard and in the cellar. This is particularly evident in the high quality and longevity of the wines.
Gentle processing and skillful ageing
The grapes are processed in the traditional way. Alcoholic fermentation usually begins spontaneously with indigenous yeasts, and the maceration time varies between 15 and 20 days depending on the vintage and wine. In the cellar, mainly large wooden barrels made of Slavonian and Austrian oak are used, supplemented by a few 500-liter tonneaux. Giulio Grasso is a master at using different types of wood and degrees of toast to emphasize the character of the wines without masking it. The use of sulphites is also kept to a minimum in order to preserve the naturalness and purity of the wines.
