The winery itself is of settled age: it has already seen four generations of winemakers, all the way back to Luigi Grasso, the great-grandfather of the youngest generation. Giulio and his wife Luciana have every reason to be proud, as 25 hectares in the best sites produce fine Barbaresco and other, high-quality wines. The range is consistently characterized by freshness and vitality, wines that tell stories and leave the competition behind in terms of price and quality.
The family headquarters and winery are located in Treiso. The Cru Barbaresco vineyards are distributed between Treiso (Valgrande and Marcarini) and Barabresco (Asili and Pora). Of the 25 vineyards owned by the family, about 17 hectares are in Treiso and the rest in Barbaresco. Production averages 100,000 bottles - no longer a small winery, but quite manageable given the usual sizes in viticulture. About half of the production is Nebbiolo (Barbaresco as well as Langhe Nebbiolo) and the other half is divided into Dolcetto, Barbera and fine Langhe white wines from Chardonnay and other grapes - as well as Moscato di Asti. High-quality limestone soils are prevalent in the vineyards, in some locations almost as white as snow.
For over twenty years, the highly respected wine consultant Beppe Caviola has been working with the Grasso family to improve the methods in the vineyard and winery. The cultivation is sustainable and it uses methods called 'agricultura integrata" - the cultivation is done in harmony with nature, only minimal interventions and corrections are necessary in the vineyard. Alcoholic fermentation traditionally begins spontaneously and with indigenous yeasts - except in difficult years when the risk is too great - nothing is left to chance at Ca' del Baio. The maceration period is rather long, 15 to 20 days, depending mainly on the wine and vintage conditions. The addition of sulfites is very low - less than half the amount allowed by law. Aging is preferably carried out in 'botti grandi" - large wooden barrels made of Slavonian and Austrian oak. The winery also has some 500 liter tonneaux and Giulio Grasso is known for his skillful use of wooden barrels of different sizes and toastatur. - Gerardo
