Carricante - the white Etna grape variety
Origin and characteristics. Carricante is an autochthonous Sicilian white wine variety that is particularly widespread in the province of Catania, especially on the volcanic slopes of Mount Etna. It was already mentioned in the 18th century in the sandy soils of Castiglione di Sicilia. Its name (Ital. caricare = loaded) alludes to the high yields (up to around 5-6 tons/ha). The medium-sized grapes are compact with thick skins, which makes them relatively disease-resistant. Carricante ripens late, prefers cool climatic conditions and higher altitudes, as is typical on Mount Etna. Due to its malic acid content (high fixed acidity), malolactic fermentation is usually necessary.



The Etna terroir: climate, altitude, soils
Mount Etna has a profound influence on the wine-growing climate. Its vineyards range in altitude from around 400 to over 1,200 meters - with steep sunny terraces on the northern, eastern and southern slopes. At these altitudes, the climate is significantly cooler and wetter than in the rest of Sicily: there is about twice as much rainfall and pronounced day-night temperature fluctuations. Even in midsummer, temperatures often only reach around 20 °C at night, while the intense sunshine ensures ripeness during the day. The five growing areas (north, north-east, east, south-east, south) surround the volcano in a semi-circle and create a variety of microclimates due to the different exposures.

The soils are of young volcanic origin: layered lava, ash, lapilli, sandy cinders and clay. These rocks are extremely rich in minerals (rich in iron, calcium and magnesium compounds). As the soil is poor in lime, the vines even absorb sea salt particles, which sometimes gives the wines a subtle salty note. The loose, well-drained soils also ensure healthy grapes with concentrated fruit and typical minerality. Overall, Etna's volcanism and location create a unique terroir that gives the wines a clear mineral freshness.



Wine style of the Etna Bianco
Etna Bianco is a predominantly dry white wine. By law, it must be based on at least 60% Carricante (80% for Superiore). It is often produced as a single-varietal wine, occasionally blended with other local varieties such as Catarratto or Minnella Bianca. A light straw-yellow color and a clear, restrained bouquet are typical. The nose is dominated by fresh citrus aromas (lemon, grapefruit), green apple and white flowers (e.g. orange blossom). Herbal notes or a hint of star anise are also frequently present. The pronounced minerality is particularly striking: the wine is sometimes described as smoky, stony or salty.

On the palate, Etna Biancos have a lively acidity with a fine melt. The structure is mostly lean and elegant, occasionally the wine gains a little creaminess through a little yeast ageing or a little wood. The slightly salty and herbal aftertaste, which lingers for a long time, should be emphasized. Thanks to the high acidity and minerality, good vintages can age for years: Experts point to 5-10 years of ageing potential, during which additional depth and complexity develop.

Etna Bianco wines are an excellent accompaniment to Mediterranean dishes: Oysters, mussels, grilled fish, seafood and also with white meat or vegetable risotto. Their freshness and saltiness make them excellent accompaniments for Sicilian cuisine with saltwater fish, pasta with lemon or vegetable specialties.



Differences to other southern Italian white wines
Unlike many southern Italian white wines (such as Grillo, Fiano, Greco or Chardonnay from warm hillside vineyards), Etna Bianco is characterized by more elegance and minerality. Instead of tropical, lush fruit, the Carricante wine is dominated by clear citrus and herbal tones with a pronounced chalky or salty note. Experts sometimes compare the style to a mineral Chablis or a dry Riesling - mainly because of the distinctive acidity and stoniness. While Grillo (Marsala) or Falanghina (Campania), for example, often come across as opulent and fruity, Etna Biancos are slimmer and more subtle. Overall, the cool altitudes and volcanic soils of Mount Etna give the whites a freshness and tension that clearly sets them apart from the other white wines of southern Italy.



Well-known Etna producers: Planeta, Donnafugata, Cusumano
Planeta - Contrada Taccione (Feudo di Mezzo): The large-scale producer Planeta presses an Etna Bianco Contrada Taccione in the Castiglione di Sicilia area. This is vinified from 100% Carricante (altitude approx. 690-720 m on black lava soils). The wine is vinified organically and typically displays fine citrus fruit, clear minerality and lasting freshness. Winemaker Alessio Planeta likes to describe Etna Biancos as “crystalline”, with sharply accentuated mineral notes.

Donnafugata - Sul Vulcano (Etna Bianco DOC): With “Sul Vulcano”, the traditional Donnafugata dynasty produces an Etna Bianco (DOC) from Carricante with small additions of other varieties. The grapes come from north-facing slopes at an altitude of around 730-750 meters. The wine is matured mainly in stainless steel tanks (approx. 10 months) and partly in used barriques. The result is a dry, fresh white wine with citrus and herbal aromas and a subtle hint of honey or spice due to the brief contact with oak.

Cusumano - Alta Mora (Etna Bianco Carricante): The family business Cusumano (in collaboration with Dolce & Gabbana) runs the Alta Mora project on Mount Etna (sites near Piano Tavola, approx. 700 m). Their Alta Mora Etna Bianco is a single-varietal Carricante. Tasting notes speak of pineapple and papaya notes with chamomile accents, combined with smoky, stony minerality.
