Aurantium is produced in a complex, multi-stage process - similar to limoncello, but with the characteristic aroma of sun-ripened oranges. Production begins with the careful peeling of untreated oranges, whose peels are then macerated in high-proof alcohol for three to four weeks. This allows the essential oils and intense aromas to be released particularly gently and completely.
After this maturing period, the aromatic infusion is brought to drinking strength with a water-sugar solution and slightly heated. This is followed by a further extraction, in which the diluted infusion is again mixed with the peels. After a final resting phase, the distillate is filtered and bottled. The result is a fine orange liqueur with a fruity, spicy depth - handcrafted for special moments of pleasure. - Gerardo [TS10/26]
