Vino Santo | Wine Classic
Vino Santo is a dessert wine produced in Tuscany, Marche, Umbria and other Italian regions according to centuries-old tradition. Regional production is bound by regulations and protected by the DOC (Denominazione di origine controllata) seal of origin, which guarantees the quality of the wine. Traditionally, the white grape varieties used are Trebbiano and Malvasia, with Sangiovese grapes added for a rosé version. The grapes are air-dried in the attics of the winemakers until Christmas, which causes them to rosin and concentrate their sweetness in the core. Pressing takes place about a year later - depending on the desired sweetness level of the wine.
Followed by this, the Vino Santo is aged for at least three years in 'caratelli', small wooden barrels, in the attic. Due to the temperature variations to which it is subjected during storage directly under the roof, the Vino Santo becomes robust and acquires its characteristic thickness and oiliness. Notwithstanding its status as a dessert wine, Vino Santo is available in a variety of styles from dry to sweet, with dry being close to a sherry. Traditionally, it is served with cantuccini or other sweet pastries - it is not uncommon for Italians to dip their cantuccini in the vino.
