Vino Santo | Wine Classic

Vino Santo is a dessert wine produced in Tuscany, Marche, Umbria and other Italian regions according to centuries-old tradition. Regional production is bound by regulations and protected by the DOC (Denominazione di origine controllata) seal of origin, which guarantees the quality of the wine. Traditionally, the white grape varieties used are Trebbiano and Malvasia, with Sangiovese grapes added for a rosé version. The grapes are air-dried in the attics of the winemakers until Christmas, which causes them to rosin and concentrate their sweetness in the core. Pressing takes place about a year later - depending on the desired sweetness level of the wine.

Followed by this, the Vino Santo is aged for at least three years in 'caratelli', small wooden barrels, in the attic. Due to the temperature variations to which it is subjected during storage directly under the roof, the Vino Santo becomes robust and acquires its characteristic thickness and oiliness. Notwithstanding its status as a dessert wine, Vino Santo is available in a variety of styles from dry to sweet, with dry being close to a sherry. Traditionally, it is served with cantuccini or other sweet pastries - it is not uncommon for Italians to dip their cantuccini in the vino. Vin Santo is the expression of the typical Tuscan dessert wine. The grapes Trebbiano, Malvasia and San Colombano are selected in the field and harvested late. After a drying period, the must is fermented for at least 4 years in small oak, cherry and chestnut barrels. Then the wine is bottled and aged in horizontal bottles for about 6 months. This Vin Santo is made from selected Malvasia and Trebbiano grapes according to traditional methods: After harvesting, the grapes are dried and fermentation is slow and in small oak barrels. The subsequent aging and bottle aging is five years.

The color of Vin Santo del Chianti Classico is light amber, in the aroma roasted almonds, apricots and ripe dates. Pleasantly noble sweet taste on the palate. - Gerardo [TS06/16]

Always produced in small quantities, Vin Santo is the typical and traditional dessert wine of Tuscany. Intense red-gold color with bright maroon reflections.
