Exclusively from blue grapes Italian red wine is produced. Red wine differs not only in the grape varieties used, but also in the production process. The pressed, initially more colorless juice of the grapes undergoes alcoholic fermentation during the mash, which, among other things, dissolves the red color pigments. Short maceration results in red wines with a fruity character, which tend to be drunk young and not stored. As the maceration progresses, the amount of dissolved color pigments, tannins and phenols increases, allowing for the development of a great storage wine. - Gerardo [TS06/22]
