The vineyards of Borgo Scopeto
The vineyards of the winery extend over 70 hectares and benefit from the unique conditions of the region. At an altitude of 350 to 420 meters, mainly Sangiovese vines thrive here, which are essential for the production of the renowned Chianti Classico. In addition to Sangiovese, other grape varieties such as Cabernet Sauvignon, Syrah and Merlot can also be found.
The soils consist of sandy, stony material and clay, typical of the Chianti region. Particularly noteworthy is the vineyard Vigna Misciano, which lies at over 400 meters and has a south-easterly exposure. The vines, predominantly Sangiovese, thrive on a stony, clayey soil that gives the grapes an exceptional profile. These grapes are used to produce the exclusive Chianti Classico Riserva Vigna Misciano, a prime example of the class and elegance of the region.
Innovation in wine production
Borgo Scopeto relies on state-of-the-art technology to guarantee the highest quality standards in wine production. The winery has been extensively modernized in recent years and has 50 stainless steel tanks with capacities ranging from 11 to 260 hectolitres. The total capacity of the winery is an impressive 7,000 hectoliters.
The wines are matured in large Slavonian oak barrels and in French tonneaux. The ageing process is optimally controlled by automated temperature and humidity controls. A state-of-the-art bottling plant ensures hygienic safety and preserves the quality of the wines from the barrel to the bottle. Before the wines go on sale, they are stored in a climate-controlled room, where they undergo the final phase of the ageing process.
The production process: precision and dedication
The grape harvest usually begins in mid-September and is mainly carried out by hand in order to treat the grapes with care. After the harvest, the grapes are transported to the winery in special containers, where they undergo gentle pressing.
Fermentation lasts between 7 and 15 days, depending on the wine, and includes techniques such as remontage (pumping over) and délestage (gentle stirring of the must) to optimize the extraction of tannins and colouring agents. After fermentation, the must and solids are separated, followed by malolactic fermentation, which converts pungent malic acid into milder lactic acid. This careful process contributes to the balanced texture and fullness of flavor of the wines.
