The Cantuccini alle Mandorle by Amari are a piece of living Tuscan tradition, hailing from the manufactory in Carmignano, not far from the city of Prato, which is considered the historical birthplace of this iconic almond pastry. Unlike many industrial variants, the company relies on artisanal production with the finest ingredients such as fresh eggs, Italian flour, and a high proportion of whole almonds, which give the dough its unmistakable, crumbly hardness and intense fragrance through the classic double-baking process ('bis-cotto').
Culinary-wise, these cookies are inextricably linked with 'Vin Santo', a sweet dessert wine into which they are traditionally dipped to soften the firm structure and create a perfect harmony of flavors between the nuttiness of the pastry and the sweetness of the wine.
