The relatively unknown Taggiasca olive is mainly used for the production of high quality Ligurian olivesöls. As an edible olive, it is appreciated for its delicate olive flavor. The Taggiasca is usually offered pitted, as its pit is very large compared to the flesh. The loss of flavor due to coring is insignificant, since the olive has a high Öl content.
