Sauvignon DOC 2016

  For a long time, Sauvignon, introduced from Bordeaux towards the end of the 19th century, was considered in South Tyrol as a bulky, almost 'stubborn' white wine that disappointed the expectations of cellar masters if the wrong location was chosen. Especially in deep and warm sites, it puts on a ponderous, broad body. The Sauvignon vine prefers airy slopes such as the Kurtatsch sites between 400 and 600 meters above sea level. The constant breeze exerts a climate-regulating influence. The Sauvignon vineyards are located between 450 and 600 meters above sea level. The vineyards, most of which are very steep, face southeast. The Sauvignon vines stand on lean, calcareous subsoil with high mineral diversity. The evening fall winds cool the sensitive Sauvignon grapes and, in addition to the soil imprint, are responsible for the floral freshness and persistent minerality of the wine. - Gerardo [TS10/17]
