  With its straw-yellow to greenish-yellow shimmering color, the Siftsgarten Eisacktaler Sylvaner from Kloster Neustift immediately embodies the alpine freshness of the Eisack Valley. The nose reveals an enticing bouquet of ripe apples, sun-ripened pears, and delicate honeydew melon, accompanied by a hint of fresh herbs and white flowers, enriched by a subtle mineral note. This combination impressively reflects the special terroir of its origin—moraine and slate soils at 650-750 meters above sea level in the Brixen valley basin—whose mineral-cool character gives the wine its characteristic freshness and clear expressiveness.

On the palate, Siftsgarten Sylvaner is powerful yet balanced: lively acidity balances the fruity juiciness, while mineral tension and a subtle buttery texture hint at partial wood aging—the wine is aged partly in stainless steel and partly in acacia barrels. The finish is juicy and lingering, carried by a refreshing liveliness that makes the wine an ideal accompaniment to asparagus, seafood, or light, regionally inspired dishes.
