The Fasoli Gino winery, run by brothers Natalino and Amadio Fasoli in Veneto, embodies an impressive combination of traditional winemaking and innovative processes. In addition to their family's heritage, the brothers have also perfected the grape-drying process that they use frequently at their winery.

In the picturesque Veneto region, known for its breathtaking landscapes and exquisite wines, the Fasoli brothers grow several grape varieties, including Chardonnay, Corvina, Merlot and Cabernet Sauvignon. What makes their wines special, however, is the way they process the grapes.

The Fasoli brothers have refined the art of drying the grapes, also called 'appassimento'. In this process, the grapes are carefully selected after harvest and then spread out on special racks or mats for controlled drying. This process concentrates the sugar content and aromas of the grapes, giving the wines exceptional complexity and intensity.

The Fasoli Gino winery is committed to sustainability and uses natural ventilation techniques to dry the grapes in order to minimize energy consumption. This keeps the wines not only authentic, but also environmentally friendly. Fasoli Gino wines are the result of this careful grape drying technique. They offer a wide range of aromas and flavors, from fruity and floral nuances to ripe berries and spices. The deep dark and concentrated Rosso Veronese 'Valpo' has much of its 'big brother', the world-famous Amarone: the color is a rich garnet red, in the aroma of dried fruit, coffee and some licorice. The palate is fleshy and juicy, marked by sweet tannins. The complex aroma continues into the long finish. - Gerardo [TS05/15]
