In the picturesque Veneto region, known for its breathtaking landscapes and exquisite wines, the Fasoli brothers grow several grape varieties, including Chardonnay, Corvina, Merlot and Cabernet Sauvignon. What makes their wines special, however, is the way they process the grapes.
The Fasoli brothers have refined the art of drying the grapes, also called 'appassimento'. In this process, the grapes are carefully selected after harvest and then spread out on special racks or mats for controlled drying. This process concentrates the sugar content and aromas of the grapes, giving the wines exceptional complexity and intensity.
The Fasoli Gino winery is committed to sustainability and uses natural ventilation techniques to dry the grapes in order to minimize energy consumption.
