The nature of the soils, the Mediterranean climate, the mild influence of Lake Kaltern and the nightly cool air currents from the Alps are the companions on the way to great wines. The Baron Di Pauli winery comprises two unique wine farms: the 9-hectare Arzenhof near Caldaro and the 5-hectare Höfl unterm Stein in Söll near Tramin.
Baron di Pauli's goal is to create wines of the highest quality, full of character, and spares no effort and makes no compromises. Yields in the vineyard are reduced to a minimum, allowing the vine to concentrate all its strength on a few grapes, which are then harvested by hand. "Baron Di Pauli's ambition is to vinify exceptional wines, each of which tells the story of this unique terroir and vintage. The history of the Baron Di Pauli family in Caldaro dates back to the 18th century, when - coming from Carano in Val di Fiemme via Aldein - they found their home here. In the 19th century, the Baron Di Pauli winery was k. u. k. Court supplier and sold its wines as far as the court of the Tsar in St. Petersburg.
The winery consists of two farms: the 9-hectare Arzenhof is located directly above Lake Caldaro on a natural terrace in the middle of a unique red wine zone. These excellent conditions are used for the cultivation of Cabernet Sauvignon and Merlot as well as the autochthonous varieties Lagrein and Kalterersee (Vernatsch). The 'Höfl unterm Stein' is located in Söll near Tramin. There, Gewürztraminer, Riesling and Sauvignon are grown on a southeast-facing slope at about 500 meters above sea level.
The 'Enosi Weiss' has become a somewhat atypical classic: The cuvée of Riesling and Sauvignon is unique in South Tyrol and impresses with its freshness and fruitiness.
