Linguine all'uovo are long, narrow, flat-cut noodles whose name—linguine—means “little tongues” in Italian, alluding to their elongated shape. They are somewhere between spaghetti and fettuccine in shape, slightly wider than spaghetti but narrower than classic ribbon noodles, offering an ideal balance between texture and surface area. This pasta traditionally comes from Liguria, but has been further developed in the Campofilone tradition, where it is made from the best durum wheat semolina and fresh eggs. Gentle, slow drying at low temperatures ensures that the linguine retains its silky surface and pleasant firmness.

Thanks to these characteristics, linguine all'uovo is extremely versatile and goes particularly well with aromatic sauces. It absorbs oil, pesto, or light tomato sauces excellently and is a classic accompaniment to seafood dishes such as linguine alle vongole, but is just as delicious served with fresh vegetables or light herb sauces.   For an exquisite taste experience, Linguine all’uovo can be combined perfectly with a light lemon cream sauce and fried scampi, as its special surface structure absorbs the creamy emulsion ideally. To prepare, briefly sauté garlic and fresh shrimp in high-quality olive oil, deglaze with dry white wine, and then refine with a little cream and fresh lemon zest before folding in the al dente pasta directly in the pan. The high egg content ensures a smooth binding that harmonizes wonderfully with the fresh acidity of the lemon and the delicate sweetness of the seafood.

An equally delicious variation is to prepare it with a rich wild mushroom sauce, for which fresh porcini or chanterelle mushrooms are sautéed in butter and served with chopped parsley and plenty of Parmesan cheese. The flat shape of the linguine all'uovo ensures that the aromatic sauce and mushroom pieces adhere well to the pasta without masking the delicate flavor of the durum wheat.
