Progress and Sustainability Go Hand in Hand
“Small winegrowers for great quality.” With this guiding principle, the 224 members of Cantina Bolzano shape the South Tyrolean wine landscape and set new standards for sustainable and innovative wine production.
Architecture and Sustainability
The new headquarters of Cantina Bolzano, opened in 2018, was the first winery in South Tyrol to receive the coveted sustainability certificate from the South Tyrolean Eco-Institute. The above-ground prism-shaped building, with its play of light, resembles a vine leaf and blends harmoniously into the hilly landscape. Both architecture and grape processing follow the latest principles of ecological responsibility.
Gravity-Flow Production
At the heart of production is the gravity-flow principle. The entire process - from the arrival of the grapes to the finished wine - takes place over five levels without the use of mechanical pumps or conveyors. Grapes, must, and wine gently flow downwards, saving energy and preserving quality.
Energy Efficiency and Climate Protection
The building combines functionality, wine culture, and ecological awareness. Cantina Bolzano is the first winery to be certified by CasaClimaWine®. In the underground cellars, natural hillside temperatures create optimal conditions - artificial cooling is unnecessary. When heat is needed, solar panels and pellet heat pumps provide environmentally friendly energy.
Innovation and Individuality
The new facility also created more space for innovation: Grapes from different vineyard sites can be processed separately, allowing the unique characteristics of each plot to shine.
Quality Project and Sustainable Viticulture
Already in 1988, the winery launched a quality project that unites sustainable top wines with nature conservation. The focus is on enhancing the vineyards: 83 growers cultivate 118 hectares according to strict requirements regarding location, soil, planting density, and vine age. Yields are limited - to 70 hectoliters per hectare, and for the Riserva line, even to 40 hectoliters.
Commitment to Nature
Sustainability is a lived responsibility at Cantina Bolzano: Green manure ensures healthy, resilient vines and encourages the return of beneficial insects. Only organic fertilizers are used. Plastic is to be gradually replaced by increasingly biodegradable materials.
