History of Cantina San Donaci
The story of San Donaci began in 1933, when twelve visionary farmers decided to join forces to secure the economic future of their homeland and improve the quality of their products. Today, the cooperative has around 300 members and processes between 2,500 and 3,000 tons of grapes annually—an impressive testament to continuous growth.

Through decades of experience and a spirit of innovation, San Donaci has become one of the most important reference points in the Apulian and Italian wine world. Its proximity to the famous Salice Salentino appellation particularly highlights the close ties to the history and culture of local viticulture.



The Vineyards
San Donaci’s vineyards thrive on calcareous clay soils that perfectly complement the warm, dry climate. The vines are tended with great care, depending on location, water supply, and the intended style of the wine. Particularly noteworthy is the traditional Alberello system, in which the vines are trained low to the ground—a method that produces lower yields but especially concentrated grapes.

In addition to traditional grape varieties such as Negroamaro, Primitivo, and Malvasia Nera, international varieties like Syrah, Cabernet Sauvignon, Chardonnay, Fiano, and Trebbiano are also cultivated in the vineyards. However, the preservation of local varieties always remains central, to keep the typical aromas of Apulia alive in the wines.



The Winemaking Process
Cantina San Donaci combines traditional winemaking with state-of-the-art technology. Every step—from pruning to bottling—is precisely controlled to maintain consistently high quality. A team of experienced agronomists supports the cooperative members throughout the entire cycle—from variety selection to the implementation of sustainable management strategies.

With over 300 hectares of vineyards in particularly privileged locations in Salice Salentino, San Donaci has a unique mosaic of soils and microclimates that significantly shapes the diversity of its wines.

Primius - Primitivo di Manduria
Primius is an expressive Primitivo di Manduria with dark fruit, notes of black cherry, plum, and a hint of vanilla. On the palate, it is velvety, full-bodied, and balanced, with a long, pleasant finish. An ideal wine for hearty dishes, grilled meats, or spicy pasta.



Anticaia Negroamaro
Anticaia Negroamaro impresses with ripe aromas of red berries, a hint of herbal spice, and a smooth texture. Its fine tannin structure makes it an ideal food companion—versatile, balanced, and typical for Salento.



Contrada del Falco - Salento Rosso
This elegant blend combines Negroamaro with a small proportion of Primitivo and Malvasia Nera.
