The best wines from Puglia: a comprehensive selection from San Donaci

About Cantina San Donaci
San Donaci is a renowned winery cooperative in Apulia that is characterized by its exquisite wines. The vineyards stretch across the picturesque landscape around the village of San Donaci and offer ideal conditions for growing grape varieties of the highest quality.

History of the Cantina San Donaci
The history of San Donaci goes back a long way and is characterized by passion and dedication to winemaking. Since it was founded, the winery has become a symbol of high-quality, affordable wines from Apulia.

The Cantina, one of the oldest wineries in Salento, was founded in 1933 by a group of 12 farmers whose aim was to develop the economy of their land and its products. Over time, the number of partners of the winery has increased and today it has around 300 partners, with a grape production that varies between 25,000 and 30,000 quintals depending on the year. It has become an important point of reference for Italian and Apulian oenology, thanks to its commitment and long tradition in the area, which also plays a major role in the history of Salice Salentino.

The vineyards
The vineyards are cultivated on calcareous clay soils that favor a warm and dry climate. San Donaci uses different cultivation systems (bush vines or alberello and cordon) and cultivation practices that are closely linked to the availability of water in the soil, the grape yield and the type of wine to be produced. The traditional Alberello system, which has its origins in antiquity, has been maintained by the winery.

This planting system, common in the Mediterranean region, is characterized by moderate growth, few buds and consequently high quality grapes. Cantina San Donaci uses only indigenous grapes from its vineyards: in addition to the three traditional varieties such as Negroamaro, Primitivo and Malvasia Nera, Sirah, Cabernet Sauvignon, Malvasia Bianca, Chardonnay, Fiano and Trebbiano are also used.

The winemaking process
San Donaci attaches great importance to traditional winemaking techniques combined with state-of-the-art processes. Every step of the production process is carefully monitored to ensure the highest quality.

To this end, Cantina San Donaci is equipped with the most modern technologies to guarantee lasting quality. The agronomists follow the conferring members, from the choice of variety to the application of the principles of integrated pest management. The company's philosophy is to pay its members according to the quality of the grapes harvested. The winery has 300 hectares of vineyards in the best locations of Salice Salentino, with a particular variety of soils and microclimates.
