Tagliatelle are considered the culinary emblem of Emilia-Romagna and are among the most beloved pasta shapes worldwide. These long, flat ribbons possess exactly the right width and surface texture to form a perfect symbiosis with hearty meat sauces, which is why they are the traditional companion to classic Ragù alla Bolognese. Yet their versatility is remarkable: they harmonize equally well with rich cream sauces, embrace noble ingredients like porcini mushrooms or truffles, and lend an elegant substance to vegetarian dishes with fresh vegetables, as they literally soak up the aromas of their accompaniments.
For Chelucci Tagliatelle, only high-quality Tuscan durum wheat semolina is used, kneaded with pure spring water from the Pistoiese Apennines. Production follows old family traditions using bronze dies, which gives the pasta its characteristic rough texture, while patient, slow drying at low temperatures protects the nutrients and the full grain aroma.
