Mock · Sauvignon DOC 2022

  The Sauvignon “Mock” from the Bolzano Winery comes from steep alluvial soils above Bolzano, where quartz and porphyry rock are mixed into the gravel—a terroir that gives this Sauvignon interpretation a distinct minerality and fine character. At the winery, the grapes are selected with great care, gently pressed after a short cold maceration, and fermented in stainless steel to clearly reflect the freshness and vital structure of the variety in the glass.

In the glass, the mocker reveals a light straw yellow color with delicate green reflections—as if you could hold a piece of South Tyrolean hillside in the bottle. The bouquet unfolds a lively variety: notes of tomato leaf, nettle, and green pepper meet peach, grapefruit, and floral nuances of acacia and elderberry - with a maturation potential even suggesting flint and a mineral finish. On the palate, this aromatic liveliness combines with a well-supported structure that shines as an aperitif and is also powerful enough to accompany herb and fish dishes, asparagus, or delicate poultry compositions. - Gerardo [TS10/23]
