Sauvignon DOC 2024

  The Sauvignon from the Neustift monastery in South Tyrol presents itself in a clear, light straw yellow color, which already announces the freshness and liveliness of this white wine in the glass. Its bouquet unfolds intense aromas of green apples, gooseberries, and a subtle note of freshly cut grass, accompanied by subtle floral accents. On the palate, it is lively and elegant, with a pronounced fruit acidity supported by a subtle mineral structure. The harmonious balance between fruit, acidity, and fine spice makes this Sauvignon a multifaceted wine that offers both pure drinking pleasure and culinary versatility.

Particularly noteworthy is the location of the Neustift monastery's vineyards, which stretch across the Eisack Valley at an altitude of around 300 to 600 meters and, thanks to their cool nights and good sunshine, create ideal conditions for the ripening of Sauvignon grapes. The long tradition of the winery, which has been known for centuries for its careful winemaking, gives the wine a distinctive authenticity and regional identity.
