To emphasize the fruitiness of the wine, the grapes are macerated with the grape skins for a few hours before pressing. Then the grapes are gently pressed and clarified from the lees by natural sedimentation. Alcoholic fermentation takes place with pure cultured yeasts at a controlled temperature of 19 degrees Celsius in stainless steel vats. - Gerardo
