The Salento Rosso Graticciaia, made from 100% Negroamaro grapes, is one of the rarest and most valuable wines in Puglia. It embodies the essence of Italy's southern region and is produced using the traditional Appassimento method, in which the grapes are dried on straw mats - the “Graticci”. This process, similar to the great Amarone wines of the north, gives Graticciaia its incomparable concentration and depth. On the nose, it develops intense aromas of ripe Amarena cherries, dried plums and a hint of cigar box. On the palate, it is opulent, with a dense fruit richness that is supported by fine tannins and perfectly integrated acidity. The complex structure and harmonious balance between power and elegance make this wine a true legend. "The 2009 Graticciaia is one of the most distinctive wines to emerge from Puglia today. Fruit is sourced from ancient alberello or head-pruned vines and is air-dried on straw mats (called 'graticci' in Italian) for up to three weeks. Stylistically, the wine shares many of the dried fruit characteristics of Amarone from Northern Italy. This expression of Negroamaro delivers dark fruit aromas of prune, raisin, scorched earth and burnt almond shell. It ages in Allier and Never barrique for one year. The charred notes are very strong and come in stark contrast to the very noticeable jammy sweetness that this wine delivers to the palate. The finish is chewy, soft and very ripe.

Vallone is responsible for the only 'aia' wine of Puglia this is loosely inspired by the great 'aia' wines of Tuscany (Solaia, Ornellaia and Sassicaia) in terms of intensity and pedigree. But the winemaking methodology is completely different here. Vallone's Graticciaia is made with air-dried fruit similar to Amarone della Valpolicella. It represents a very special expression that will appeal to those who appreciate an extra dose of sunshine in their hot-climate red wines." - Robert Parkers Wine Advocate

  Careful selection of Negroamaro grapes from old vines and raised as seedlings. The grapes first ripen and then are stored on racks to dry. The name of the wine Graticciaia derives from the space where the grapes are stored on light wicker racks made of woven reeds. When drying is complete, the grapes are used to make wine. The physiological processes in the grape - and the fermentation of the grape must - must take place in late autumn, when the outside temperatures are lower, resulting in a completely different evolution than in traditional winemaking. The temperature of the grape must is strictly regulated during the slow fermentation and the first phase of aging takes place in small wooden barrels. - Gerardo [TS10/17]
