Sauvignon DOC 2015

  The Sauvignon from the Bolzano Winery embodies the alpine freshness of South Tyrol in a glass. The Sauvignon Blanc grape variety thrives in optimal conditions on the warm, dry slopes of Überetsch and Ritten, on sandy and gravelly soils. After selective harvesting, the grapes are gently pressed and fermented at a controlled temperature in stainless steel tanks to preserve the wine's freshness and aroma. Maturation also takes place in stainless steel, which gives the wine its clear structure and freshness.

In the glass, the Sauvignon presents itself in a bright straw yellow with greenish reflections. The bouquet unfolds complex aromas with notes of tomato leaf, sage, and elderflower, accompanied by fruity aromas such as white peach and lime, as well as a hint of spices. On the palate, the wine displays a lively freshness, a fine minerality, and a long, harmonious finish. This Sauvignon is a versatile accompaniment to fish dishes, asparagus, vegetarian dishes, and is also excellent as an aperitif. - Gerardo [TS10/16]
