  The extraordinary Primitivo Dolce 21 from Cantine Polvanera originates from the barren, calcareous soils of the Murgia plateau near Gioia del Colle, where the roots of the old vines penetrate deep into the rocky underground. A special feature of its production is the late harvest of the grapes, which are allowed to raisin on the vine to achieve maximum concentration of sugar and aromas, before the wine is aged exclusively in stainless steel tanks to preserve the unadulterated purity of the fruit. The result is an almost black elixir that smells seductively of dried figs, dates, and stewed plum jam, underpinned by a fine mineral note.

On the palate, a fascinating interplay unfolds between the lush residual sweetness and a vital acidity, which gives the powerful body a surprising elegance and prevents the wine from feeling heavy. This noble drop is excellent as a 'Vino da Meditazione' for pure enjoyment, but due to its structure, it also harmonizes perfectly with traditional Puglian almond pastries, sharp blue cheese, or a chocolate mousse with a high cocoa content. - Gerardo [TS10/08]
