Chelucci Mezzi Maniche (literally 'half sleeves') are short, cylindrical tubular noodles that impress with their simple elegance and enormous versatility in the kitchen. Unlike ridged varieties, this pasta relies on a smooth, almost silky surface that creates a particularly pleasant mouthfeel and harmonizes excellently with creamy companions. They are the ideal choice for Roman classics like Carbonara or Amatriciana, as their compact shape and generous hollow center wonderfully capture the sauce as well as small cubes of bacon or vegetables without masking the intrinsic flavor of the ingredients.
At the traditional Chelucci manufactory, only the best Tuscan durum wheat semolina is mixed with pure spring water for this pasta variety. Production is carried out with artisanal precision, placing special emphasis on slow and gentle drying at low temperatures.
