Trenette are one of Liguria’s oldest and most renowned pasta shapes, resembling Linguine with their flat, ribbon-like form but often distinguished by a slightly oval cross-section. Culinarily, they form an inseparable union with the famous Pesto alla Genovese, a dish traditionally enhanced with green beans and diced potatoes to create a particularly rich consistency. However, their textured surface makes them true all-rounders: they harmonize not only with basil-based sauces but also perfectly capture the flavors of seafood stocks, delicate cream sauces, or simple compositions of olive oil and fresh herbs.
For the production of Chelucci Trenette, only high-quality Tuscan durum wheat semolina is used, kneaded with crystal-clear spring water into a smooth dough. The manufactory relies on traditional bronze molds and patient drying at low temperatures, which gives the pasta its characteristic rough texture and intense aroma of grain. This meticulous process guarantees not only excellent firmness to the bite ('al dente') but also preserves valuable nutrients, ensuring that a piece of authentic Italian craftsmanship is served with every dish. - Gerardo [TS10/26]
