Pici Stella Toscani are far more than just a type of pasta; they are a culinary landmark of Tuscany and embody the rustic soul of Italian country cuisine. These thick, almost cord-like strands are characterized by their substantial diameter and artisanal appearance, reminiscent of traditional, hand-rolled homemade pasta. Due to their robust stature and firm consistency, they demand equally strong companions: they are the perfect partner for hearty wild boar ragouts, creamy mushroom sauces, or the classic 'Sugo all’aglione' with tomatoes and garlic. Their grippy surface and substantial volume ensure they do not get lost in the sauce, but rather turn every bite into a hearty and down-to-earth taste experience.
At the Chelucci manufactory, only select Tuscan durum wheat semolina is mixed with pure, clear spring water for this specialty. Production is carried out with the utmost dedication to old craftsmanship methods, where the use of bronze molds provides the necessary roughness to bind sauces optimally. A crucial factor for quality is the slow, gentle drying at low temperatures: it guarantees that the Pici retain their typical, firm bite and keep their shape even after the slightly longer cooking time.
