Chelucci Cannelloni Mezzi Rigatoni are a sophisticated hybrid form that combines the best of two worlds: the generous opening of classic cannelloni and the compact manageability of rigatoni. Their distinctive, ridged outer structure serves not only a visual purpose but acts as the perfect adhesion surface for creamy béchamel sauces or chunky tomato sugos that get caught in the grooves. Thanks to their stable hollow center, they practically invite creative fillings—whether with a ricotta-spinach mixture or fine minced meat—to subsequently meld into golden-brown gratins in the oven, all while maintaining their shape without falling apart.
Like all specialties from the Chelucci house, these noodles are based on the purist recipe of select Tuscan durum wheat semolina and crystal-clear spring water. Production takes place using bronze dies, giving the surface a rustic porosity often missing in industrial products. Through the process of slow drying at low temperatures, the natural protein structure remains intact, guaranteeing that the pasta retains its typical, firm-to-the-bite core and full, aromatic grain flavor during cooking or baking. - Gerardo [TS10/26]
