Campo Lavei - a high quality Valpolicella Superiore is produced according to similar rules as the famous Amarone or its little brother Ripasso. At Ca' Rugate, a modern process is used that allows for a fresh wine with integrity and high quality: some real Amarone must is added to the base Valpolicella and a second fermentation occurs with higher alcohol and lower acidity.
