Doss · Cabernet-Sauvignon Riserva DOC 2022

  The “Doss” Cabernet Sauvignon Riserva from the Girlan Winery is a powerful red wine that combines the best characteristics of this international grape variety with the unique terroir of South Tyrol. The grapes come from two outstanding locations: the well-ventilated hills of Oltradige at around 400 meters above sea level and the warm, deep soils of western Bassa Atesina at around 300 meters above sea level. These different microclimates contribute to the complexity and structure of the wine. After hand harvesting, fermentation takes place in stainless steel tanks filled by gravity, followed by malolactic fermentation and 18 months of aging, partly in large wooden barrels and partly in barriques. Before release, the wine ages for a further six months in the bottle.

In the glass, the “Doss” presents itself in an intense, deep ruby red. The bouquet is complex and spicy, with aromas of ripe dark fruits, complemented by nuances of tobacco, pepper, and a hint of vanilla. On the palate, the wine shows impressive structure with powerful but well-integrated tannins and lively acidity, giving it excellent aging potential. The finish is long and harmonious. This Cabernet Sauvignon Riserva is an ideal accompaniment to hearty dishes such as grilled beef, game, or spicy cheese. - Gerardo [TS10/23]
