This typical Tuscan specialty is made from Sangiovese, Malvasia Nera and Canaiolo grapes. The name Governo stands for a traditional method of production: after the first fermentation, dried grapes are added to the wine to trigger a second fermentation. "Susumaniello is a rare, ancient Apulian red grape variety grown in the Salento peninsula. Its name comes from the local dialect and means 'little donkey'. Old people told us that the name comes from the enormous load the vines carry when they are young, so heavy that they can only be carried by a donkey, but others say it is so named because it is as difficult to handle as a donkey.'Finally we have a grape with the same personality as the winemaker,' Elvi said to me.... The color of Laven is a pale straw yellow with greenish reflections, fruity on the nose with notes of ripe fruit such as apple, pear, peach and some tropical fruit. Elegant and powerful on the palate, with fresh, pleasant acidity.

The Cuvée Laven represents the successful combination of different elements: The legendary Bolzano porphyry was formed from volcanic lava and gives the wine its name. In its naturalness, it recalls the origins of Bolzano and at the same time is very modern. Aging takes place partly in concrete as well as in pyramid-shaped oak barrels and in steel tanks.
