Salealto, a three-part cuvée of Insolia, Zibbibo and Grillo shows a dense straw yellow color. The nose is complex and multilayered, of yellow fruit, floral aromas and spice. On the palate powerful and concentrated, of lavish fruit and depth. Mineral in the aftertaste. - Gerardo [TS12/20]
Gerardo's Notes: Around 1800, King Ferdinando IV commissioned the agricultural expert Felice Lioy to develop a concept for improving the quality of viticulture in Sicily. Lioy introduced numerous technical innovations and created a cuvée for the king, whose grapes came from near the Tenuta di Ficuzza of Cusumano on the high plateau Pian degli Albesi at 700 to 800 meters above sea level. Although the 'recipe' of the same has not been handed down, Salealto is said to be reminiscent of this and is produced in the traditional way and only from autochthonous grape varieties: After a brief maceration of the must at ambient temperature, pressing is carried out and each variety is fermented separately. The cuvée is then blended and aged for about ten months on the fine lees in stainless steel tanks before the Salealto is bottled.
