Nino Negri's “5 Stelle Sfursat” is an outstanding example of the art of appassimento in Valtellina. Made from 100% Nebbiolo grapes, known locally as Chiavennasca, the grapes are dried in flat boxes under controlled conditions after harvesting to increase the concentration of sugar and aromas. After drying, fermentation takes place with long maceration, followed by 16 months of aging in French barriques and a further 6 months in the bottle. This elaborate process results in a wine of remarkable depth and complexity.
In the glass, the “5 Stelle Sfursat” presents itself in an intense ruby red with garnet red reflections. The bouquet unfolds aromas of ripe black fruits such as blackberry and plum, accompanied by spicy notes such as cinnamon and clove, as well as a hint of leather and tobacco. On the palate, the wine has a full-bodied structure with velvety tannins and a balanced acidity that gives it freshness. The finish is long-lasting and complex, making this wine an ideal accompaniment to strong dishes such as game, mature cheeses, or as a meditation wine.
