The production of this wine begins with a careful manual harvest into small 14 kg crates, followed by strict selection on the sorting table before the grapes are destemmed and fermented in steel tanks for seven days at 25°C. To extract optimal aromas, the must is pumped over repeatedly before the wine, after a soft pressing, undergoes both malolactic fermentation and further refinement exclusively in stainless steel. This process preserves its freshness, resulting in deep, intense ruby reflections in the glass that immediately catch the eye.
On the nose, the wine is original and surprisingly distinct, offering a multifaceted bouquet of white pepper, geranium, summer fruits, as well as plums and ripe Noto figs. On the palate, it is convincing with a soft, accessible character that perfectly captures the typical style of this ancient yet still-to-be-discovered Sicilian variety. Despite the young vines, the wine already reveals an absolutely original structure, proving just how much potential lies within this indigenous grape.
