The Pecorino Mvria shows a straw yellow color with light golden reflections and varied brilliance. This Pecorino really lies in the glass and moves slowly, a sign of high consistency. The intense bouquet is very aromatic, mixing notes of herbs with a fruity touch of yellow fruit sage and ripe jujube. The palate is powerful and very pleasant, soft velvety and at the same time powerful. Persistent the finish. - Gerardo [TS06/17]
Gerardo's Notes: 'Pecorino is considered the white grape variety of the Marche with the greatest potential to create a truly outstanding wine, due to its great ability to age. The grapes used were selected from historic vineyards where the first trials of the Pecorino grape variety were carried out in 1990. With the term Mvria the Romans referred to a mineral and tasty wine with outstanding characteristics.
In the vinification of Mvria, various labor-intensive techniques are used: among them, the 'in riduzione' vinification, in which the wine is fermented as much as possible in the absence of oxygen, in order to preserve the intrinsic aromas of the grape variety and to bottle the wine in as reductive a state as possible. To this is added the maceration of the skins with the wine, which further increases the complexity. Through constant rearrangement of wine and grape skins, Mvria is created above the skins as well as Mvria below the skins. From the merging of the two, the actual result is obtained.
