  Tenuta Sant'Antonio's Scaia Torre Mellotti Cabernet Sauvignon is an impressive expression of Cabernet Sauvignon from Veneto, superbly interpreted with a modern house style. It is made from 100% Cabernet Sauvignon, with the grapes grown in the municipality of Mezzane di Sotto, in the Località Monte Garbi area, at around 300 meters above sea level. The soils are sandy-loamy with a dominant limestone structure, which contributes to the wine's deep minerality and structure. Some of the grapes are processed fresh, while others are slightly dried using the appassimento technique to increase concentration and depth. During fermentation, natural malolactic conversion is used, and bâtonnage is carried out weekly until the end of malolactic fermentation.

In the glass, Torre Mellotti displays a bright ruby red color with violet reflections. Its bouquet is characterized by red fruits such as cherries, blackberries, and currants, accompanied by spicy and vegetal accents. On the palate, it combines warmth and fullness with a silky texture, while the tannins are finely structured and sweet on the palate. A characterful wine that is excellent on its own or with hearty meat dishes, grilled vegetables, or mature cheese.
