Salice Salentino is a DOC (Denominazione di Origine Controllata) wine region in Apulia, southern Italy, which was officially recognized in 1976. It is located in the provinces of Lecce and Brindisi and includes municipalities such as Salice Salentino, Veglie, Guagnano, San Pancrazio Salentino, and San Donaci, among others. The climate is typically Mediterranean: hot summers, comparatively mild winters, high number of sunny days; soil conditions vary from clayey loam to calcareous and calcareous sediments to stony subsoils, often with a calcareous base.



Vines and grape variety profile
The main wine of this region is the red wine “Rosso Salice Salentino,” which must consist of at least 75% Negroamaro; the rest may consist of other regionally approved red grape varieties such as Malvasia Nera. There are also variants that use 90% or more Negroamaro (“Negroamaro specification”).



Expansion and stylistics
In many cases, production involves controlling the temperature during fermentation, 7-10 days of maceration, often in steel or stainless steel containers; for Riserva versions, aging in wood (barriques or larger barrels) is common. Salice Salentino Rosso usually appears deep ruby red in the glass, with dark berries, plums, and spicy notes, often with herbs or tobacco; the tannins are typically full-bodied but soft enough to be pleasant to drink.



Riserva, storage, and quality levels
The Riserva types of Salice Salentino are subject to stricter rules: they must undergo at least 24 months of aging, part of which must take place in wood (e.g., barriques). This gives them greater complexity and shelf life. Non-Riserva versions are usually ready to drink earlier.
