This distinctive, delicate and floral red wine is made 100% from the native grape variety Ottavianello. This grape variety is traditionally grown in the Ostuni area and is regaining importance in the wake of the rediscovered grape varieties. The autochthonous Ottavianello grapes are harvested by hand in the second half of September. They are then gently destemmed and pressed. Fermentation takes place for about 15 days in temperature-controlled stainless steel vats, followed by spontaneous malolactic fermentation. - Gerardo [TS06/18]
