The Castel Serranova site wine (Vigna Castello vineyard) shows an intense ruby red color and an almost balsamic consistency in the glass. The aromatic spectrum of the bouquet ranges from bitter chocolate and plum to thyme and undergrowth. The grape harvest is done by hand at the end of September, followed by vinification. The duration of aging in wood: a part in Allier oak barrels for 12 months, then a part in cement vats, then after the fusion follows the aging in cement vats until bottling.
