Lively red wine of medium ruby color. Fine bouquet of flowers and ripe red fruits. On the palate soft, fresh and of pleasant drinking flow. Traditionally, the Governo is served chilled.
This typical Tuscan specialty is made from Sangiovese, Malvasia Nera and Canaiolo grapes. The name Governo stands for a traditional method of production: after the first fermentation, dried grapes are added to the wine to trigger a second fermentation. This process makes Governo di Castellare not entirely dissimilar to a Ripasso. - Gerardo [TS11/21]
Gerardo's Notes: The fresh wine of spring. This is the wine made according to the old government method, that is, with the addition of dried grapes after the first fermentation. It is a soft, lively and drinkable wine that is ready in the spring and can also be enjoyed cold in the refrigerator in the summer.
