In the glass of deep ruby color with violet nuances. The nose reveals complex aromas of ripe cherries, plums and exotic spices. On the palate voluminous, powerful and of refinement.
'Poggio alla Pietra' is produced according to the 'Governo all'uso toscano' method. This describes the gentle second fermentation by adding Sangiovese grapes dried on straw mats. This technique is widely used in the Valpolicella area, but has long been present in Tuscany in a similar form. The result is a complex and smooth red wine - not entirely dissimilar to an Amarone or Ripasso. - Gerardo [TS12/16]
Gerardo's Notes: 'The grape drying process has a long tradition throughout Italy, with Amarone and Ripasso wines from the Veneto region being particularly well known around the world. In Tuscany, too, grapes have always been dried on straw mats using the Governo technique. The already fermented wine is then blended with 15% of the raisined grapes, which starts a second, slow fermentation. Only recently has this traditional process been rediscovered and undergoes a contemporary revival using modern technology. The result is a wine of good complexity and at the same time wonderful drinkability.
