The Pfefferer grape is considered one of the oldest grape varieties ever, it is in fact a variation of the Goldmuskateller grape. In South Tyrol and Trentino we find a particularly interesting species, the Pfefferer grape. It is relatively long and partially double-shouldered; the color of the berries is yellow when fully ripe. The bouquet of the grape is spicy, very aromatic, both characteristics that can be found in the wine. Oppidum (Latin for 'settlement') is made from the local grape variety Moscato di Terracina, the grapes come from 35-40 year old vines. The wine is dry, highly aromatic, and of varietal bouquet: complex notes of exotic fruits, dried rose petals and sage. The wine has an enormous complexity and a remarkable finish. Several historical testimonies prove that this sweet wine has been produced since ancient times. Thus, as early as 1494, Georges de Challant offered Moscato Passito from Chambave to the King of France Charles VIII. The best yellow muscat grapes are dried in special, well-ventilated rooms. Then the grapes are vinified in the traditional way: The Chambave Moscato Passito thus prepared then rests until Christmas of the year following the harvest.
