Amarone della Valpolicella DOCG 2019

  The production of Amarone della Valpolicella follows a meticulous and traditional process that gives the wine its distinctive character. After the grapes - typically Corvina, Corvinone, and Rondinella - are hand-harvested, only the finest are carefully selected and left to dry for several months on wooden racks or in well-ventilated rooms known as 'Fruttai.' This drying process, called 'Appassimento,' concentrates the grapes' flavors and sugars as they gradually lose water. The dried grapes are then gently pressed in January or February to preserve their intense aromas.

The subsequent fermentation occurs slowly at low temperatures, as the high sugar content of the grapes requires an extended fermentation period. After fermentation, the wine is traditionally aged in barriques, for several months. This aging process imparts Amarone with its characteristic depth, complexity, and velvety texture.
